Peach and amaretti trifle

I never knew what a good combination is peach and amaretti until a few days ago. I was tidying up the kitchen cupboards and found a long forgotten pack of amaretti, well known Italian almond based cookies. Therefore I thought to make something for breakfast as I love sweets. At the times I had available a few very ripe peaches but of course it is possible to use also another type of fruit, as long as it’s suitable to blend into a mousse. To be clear: oranges are not suitable!

The result was a lovely pudding, not only delicious to eat but also very pleasant to see. Layers of amaretti, yoghurt crème, peach mousse and chunks… very yummy! And if left to refrigerate before serving, it makes a refreshing summer dessert.

Ingredients

125 g fat free greek yoghurt or quark
1 tsp honey
9 amaretti cookies
1 peach or 1 piece of other bendable fruit


Preparation

Reserve 1 cookie for decorating. Crumble all the other amaretti by inserting the cookies in a plastic bag and gently hammer them with a meat mallet.

Mix yoghurt and honey until fluffy and creamy. Wash, peel and dice the peach. Blend 3/4 of it until it becomes a mousse. If you like, reserve 2-3 thin slices of peach for decorating.

Layer a tall glass with all the prepared ingredients. I put them in this order: crumbled amaretti, yoghurt and honey crème, peach mousse and cubes. Repeat and finish with a little crumbles, 1 cookie and the reserved peach slices. Serve immediately or keep in the refrigerator for about 1 hour to serve it cold.
