When there are holidays there is food, and lots of it, so best idea is to use a recipe as healthy and filling as this vegetable detox soup, packed with goodness and taste! We do not want to eat sad food after all.
In this soup I have not used other than natural ingredients. Nothing prepacked, no stock cubes or other stuff full of preservatives. Of course, if we want to detox we must eat simple things, yet use some natural favourings to spice up.
Vegetable detox soup – the recipe

Ingredients
1 onion
300 g potatoes (about 2 or 3 medium size)
2 or 3 carrots
1 leek
1 tsp dry cumin
1 tsp dry turmeris
1 tsp dry paprika
1 tsp dry cinnamon
salt, to taste
This combination of spices is really tasty but of course any other type of spices can be used too.
Preparation
Was the vegetables, peel potatoes and carrots, trim off only the hardest bits but leaving all the green part. Chop all the vegetables roughly and put them in a big pan with the spices.
Pour water enough just to cover the vegetables and start cooking on high until it starts to boil.
As soon as it boils set to low, cover and let cook for about 1 hour, until the vegetables will be tender.
Puree the vegetables with a hand mixer to obtain a smooth consistency. Add a little salt to taste, not too much so not to lose the original taste of the fresh vegetables.
And here it is, ready to be served! A tasty vegetable detox soup, creamy and delicious, for pnly 2 WW PP per portion!

If you like you can save a few vegetables before pureeing them and serve the soup topped with them and a sprinkle of extra paprika: it looks very nice. As we say in Italian: “anche l’occhio vuole la sua parte”… “also the eye wants his share”!
